Glad you're enjoying our city Guy, welcome!
There is more to Melbourne than the inner city environs. IMO you are more likely to see 'interesting cars' on a fine Sunday afternoon heading out to and through the Yarra Valley than you will see in a whole year in the city unless there's a specific show event happening. Similar might be said for routes around the Mornington Peninsula, or the Macedon Ranges etc. These are the areas many enthusiasts and car clubs gather to exercise their classic steeds.

Jagent is correct Guy, the weekends are your best bet to see anything of any substance.
We have them here tucked away, don't worry. During the week on the coffee strips in the more leafy burbs you'll likely come across the odd piece;modern and classic. I did see a Camargue once.
When the best selling car in this country is the Toyota RAV4 and when the buying public in this rip off country (why on earth do we still have a luxury car tax?) have to pay twice the price for a car and tobacco is taxed at over $1,500 per kilo one cannot expect too much visual automotive delight now. Covid hasn't helped off course.
I'll just get back to my $50 cigar that I would pay $7 for in your parts of the planet....

You wont see much tooling around South Melbourne, just a few local preeners at best.
Place as mentioned plus Great Ocean Rd on the weekend or sit in an outdoor coffee shop in Healesville on Sat or Sunday morning as people pass through on runs up the Black Spur Rd up to Marysville and places beyond. Nice car parade some Sundays expecially. Post lockdown things ae just winding up as venues are limited. The day after restrictions lifted there were a 100 motorbikes parked in the main st in Marysville
