1964 E Type Manual Choke operation

Recently took delivery of a restored '64 E Type. I live in S Florida where the temps range from 60 - 90F degrees. I'm hoping that someone could give me
some advice on how to properly use the Manual Choke:
1) The lever has three detent stops to set the idle RPM: Hi, Middle and Low.
Which one should I be selecting? The highest setting causes it to idle about
2,500 RPM which seems very high for a cold engine
2) How long before I should shut off the choke? Until what temperature?
3) Is it best to let it idle on choke for a period of time before driving? If so,
how long?

Every car is a little different...If hi idle is 2500 rpm, that's a little high. I would drop high idle down to about 2K..If it will start cold at mid choke, then start it there...I like to start idle at 1500 rpm, and drop the idle within the first 10 seconds...Keep it in low choke position for a minute , before moving....
Once moving forward, go ahead and shut the choke off....
You should not even need the choke, after the first start and run of the day...
That is basically how I have always done it , and it has never caused any problem.
