Whilst the E-type today fetches large money when sold it wasn't always like that. My friend had 3 in the 70s and they pretty much followed the norms of the time for sports cars. So the seats have leather seat facings, but the sides not sat-on are likely to be vinyl as will be the rest of the car. However more than a single grade of vinyl was used.

I would think any of the above firms can advise you on the material used in the trim. Jaguar trim is virtually all built up in a traditional way from material "off the roll", there being no unobtainable plastic mouldings, so whilst it is usually quite expensive there is nothing unobtainable as far as I know.
