Callum mentions his intent to use it as a "daily-driver," but that would be a non-starter for me without modern safety equipment. It's a jungle out there, and I want to maximize my chances of staying alive for as long as possible.

It's extra weight and maintenance for a feature that is of little value to me. Given the amount of tinkering I do with cars, I am more likely to get injured by accidentally deploying a bag than getting saved by one. Also, my wife was seriously injured by an airbag when she was in a low speed collision.
Driver training and attention should be the focus of automotive safety. As a former driver in both closed and open wheeled race cars as well as a motorcyclist, pilot and rock climber, I am not risk averse. The likelihood of being saved by an airbag is like hitting the lottery. If you actually use one on a regular basis, then you probably shouldn't be driving anyway. It's a personal view of life. I understand that many people value safety as a priority. They buy 6+ passenger SUVs so one person can feel safe driving back and forth to work. It's a personality trait. I don't have it. My MINI is the only vehicle I've ever had with an airbag. Yes, I wear a helmet on the motorcycle, and yes I strap in tight in the car. The cost/benefit weighs heavily in favor of their use. (It's also hard to take corners at 1g unless you're strapped in well.) If everybody was risk averse, a lot of cool cars would never be driven.

I will take the risk and drive a classic car without airbags, in fact for years I drove an MGA without either airbags or seatbelts, but if a car comes with airbags as extra safety I would never have them removed even if it was possible. The benefits outweigh any potential risks by a large margin.

I've owned and driven many classic cars without bags, but when I said it was a "non-starter" for me, I was only referring to the "daily-driver" role, which Callum said he intended to use it as.
And yes, airbags do cause injuries, but I'd rather have a broken nose than dead. It's all about odds.
