This document (on p. 4) shows a stereo AUX input on the 'AV input panel', wherever that is.

This document (p. 12) says that all stereo versions have a 3.5mm aux connector in the center console. I don't have my car today, so I can't check - don't think I've ever noticed it.

Yes that's for audio input. Now I don't know if Jaguar run the loom for the video camera to the trunk even if you don't go with the Vision package; I suspect from vague memory of previous "how do I retrofit the rear backup camera" threads the answer is no.
But I'm pretty sure that buying the Pioneer accessory rear view camera is going to be a non-starter.

The Aux input is a headphone jack which can also connect some cell phones and other devices to a car's stereo. It's located in the center armrest near the USB port and 12V opening.
A three cable RCA connection would probably require some sort of actively powered converter to USB or to HDMI then to USB... if it'll work at all.
