You can see where it is in production but once they start they won't change anything

I don't think it's possible -- I actually went on a private tour at the factory. That tour inspired me to upgrade/update from a MY16 to a MY18. I befriended the tour coordinator and emailed her once I ordered the car to see if she could expedite it through production. She was really nice about it but said there's no way to make changes or move it in the queue once it's ordered. It kinda made sense to me because the cars are assembled with various components being made outside the factory and brought in later. So, if the dash isn't ready, it isn't ready....

Your dealership should be able to see in their system where the car is in the production process -- you won't be able to see that on your own. Once it goes out to be shipped, there's a thread to show you how to track your car on the vessel it takes to your hometown -- you'll need the VIN number to do that (which your dealership can provide).
