No differences at all other than the factory tune.
And yes it is really easy to tune the 340 HP version for more power, and more than 380 HP, check out the various Velocity AP threads on this forum.
I don't know of anyone who is able to put the factory 380 tune on a 340 car, no JLR dealership will do so, but it's pretty pointless as you can get a better VAP tune for not a lot of money.

+1. A VAP tune alone can get you safely to over 400hp, with programming I suspect is similar to that used by Jag to get 400hp from the 400 Sport V6.

Generally the LSD is going to make it better accelerating around corners, but aside from being a little more careful in the wet I dont think you'd notice its absence in daily driving. I got the S over the base because I wanted the adjustable suspension - the suspension in the base is too hard for me and I think that is why they are over represented in the cars for sale. It is spine compressing, whereas the S starts at **** pummelling then moves to spine crushing when it is in dynamic. That, and that the S has a more premium interior, though the base can be optioned up.
