Also, someone (cough cough Unhinged) will correct me, but those extra RPMs past the 340 horsepower are only accessible after 5000 RPM? So unless you're lighting it up on a track or open freeway, it won't be very noticeable?

Here is the comparison between the OEM V6S tune and an enhanced tune. Significant HP gains at all rpm above 3600.

Every time I look at stock torque curve it makes me cringe. What is going on after 4800rpms?!

You are looking at an exaggerated dropoff due to scaling. The chart above only shows 240 to 350 lb-ft. Below shows full scale. Far less alarming.

Thanks for all the datas! =) Love it. I can't wait to max get past my warranty to tune. I know it wouldn't do anything, but why risk it. I still can't wait to feel the extra HP. =)

They all do it, so I can't blame Jaguar for adopting the industry tactics. With the growing aftermarket, I would just buy used and then tune/pulley it and save BIG $$.
We all know how this works. Sure, you can save money and do it yourself for less, but it isn't worth as much in resale. Getting it from the factory is always cooler, even if it's just a special paint color or 5 more horsepower or a new badge.

And we will pay a premium for that because we will have something slightly less common. Why else would a moron buy an SVR?

People buy cars because they can, SVR, AMG, M, RS! My wife got her Maserati because she was tired of seeing her same car everywhere, and she wore me down because a Maserati is always a roll of the dice, only 2 years to finally get it right.
