I did some research on F Type V8S (5 Liter engine) oil.
The recommended oil is Castrol SLX 5w-20. This is a synthetic oil and evidently the only oil that meets the specifications required for this particular engine and supercharger.
Unfortunately for us, it is only available at the Jaguar dealerships and sells for $12.xx per quart.
I just finished my first year free Jag service where the oil was changed but I plan to do the rest of the oil changes myself.
Hope this help clear up what we need and where to find it.

Walt, I did some research for the oil in my V6, post #7 in the above link may be of interest, the oil is available at Walmart..... I don't have access to the manual for your V8, is it different than the V6?

According to the Dallas Park Place Jaguar dealers, Dallas and Plano, the 5 liter supercharged engine, V8 S, uses Castrol SLX 5w-20 and there is no spec alternative. They also state that SLX is only available at Jaguar dealerships. In searching for it online I have been unable to find it elsewhere so that appears to be true.
If there is an authorized alternative I have not be able to find it in writing. So I plan to change my own oil with the recommended SLX and bite the extra $5 per qt. It will cost me an extra $40 for the 8 quarts. I do find it very interesting that the recommended Castrol oil is only made available to the dealers and the price is very inflated, in my opinion.
