Back to the op's question the base v6 missed out on some important options. In the uk at least it didn't even come with cruise as standard. I was looking for a v6 S but in the end i found a base with just about every option added in British Racing Green with Brogue performance seats and it's just beautiful.
On practicality I have found that with the spare removed I can fit 2 X 6 bottle cases of sparking wine together with a carton of Asahi and one or two bottles of spirits in the back (without removing the cover) and have enough room left over for some snacks to have with them.
If I had to drive somewhere for 12 hours, F-type would not be my first choice. This is mostly because I am spoiled and have other cars that are better suited for long road trips. My favorite convertible for road trips is R107 Mercedes SL - very comfortable ride and has lots of clearance in case you have to drive on gravel roads.
Now if I had to drive somewhere, and it had a race track there... then yes, absolutely I'd take F-type. I have done many outings in my F-type where I can easily combine a half day at the track with wine&dine, theater and countryside touring - the car can do both really well.
Your budget may permit you to get a newer model than you think. Check Autotrader for new 2018s still sitting on dealer lots. Selection is limited but there are some deals to be had if you don't mind getting a car that has been sitting around for a while.

See? No compromise needed with this car. What else do you need? (though, the electrified wine worries me a bit)
I wanted a manual but gave up because most of the examples with a manual are very light in other desirable options. Besides, the AT is excellent.
To get a well optioned MT, you really had to order from the factory ever since the MT was introduced, and folks placing a special order are most likely to hold on to it for a long time.
I searched for a long time for a 2017 F type S AWD.
I was sure I could compromise some things but not British Racing Green.
I finally found one and I am absolutely happy I did not.
If you see one in person it is stunning.
The metallic color shifts an from some angles you would scare it is black.
I have had a number of people ask me what color is your car.
I knew I had the Vision Package when I bought the car but wasn’t completely sure it consisted of. So I was pleasantly surprised when the brights turned on my themselves in the darkest dark, when the cornering lights came on when I turned into my driveway, and the car beeping when someone is approaching as I back out of a parking spot.
I just bought my 2016 F-Type. I got everything I wanted, at a price I could afford. At the right price, I would have sacrificed one or more of the lower priority features. Here was my feature priority list...

Now that I have the car, knowing what I know - I probably would add
7 - Apple CarPlay compatible infotainment
Mine is NOT CarPlay compatible (yet) - but I think it wouldn't have effected my buying decision.
The car has a reputation for being unruly but that is attributable to having way more HP than people are used to, plus the OEM's decision to equip it with all season passenger sedan tires.
Dislikes? It could use more power.

I guess when I really start inquiries on specific cars I need their original options or build sheet.
To me at this point the BASE model is out. The S and R versions see to include a lot of the options I want.
I think at this point my ideal ride would be an S or R model (R with AWD)
I tried out the upratedd seats over the weekend and really like them. I'm only 5-9 and about 200lbs so seemed ideal.
At what point did the newly updated infotainment become available. How many were ordered with that? I see somplaints about the original being sluggish/ I think I'd be happy with any really. When does the one come with the larger screen?
Is there an option for heater steering wheel? I have reynards in my hands and would like that.
How bout heated seats?
I drive cars all year round as we only have 2 cars and an old truck.
Just about any F would be fine with me as long as its decently optioned. I'm still plunking along with and S-Type R (albeit upgraded to about 470hp thru mods) and drive it daily.
I guess my ideal would be an S in BRG and a tan or brown (one brown looks really cool) . I'm also not a fan of the new tuner trend of gloss black wheels. One pic I saw was one where the rims were either fake or real carbon look. Are they off market or OEM?
Some good advice above, BUT, no matter what you do it will NOT be "a good all around balanced grand tourer." That simply is not what the car is. The earlier MYs are aggressively not so. The newer ones are more civilized. But no one is going to go grand touring with that rear glove compartment.
Maybe grand tourer was a misnomer. I meant Mini tourer LOL like a few overnite bags...
The cold climate option in comes with heated seats and heated steering wheel.
Yep, mine has that option.

I love the heated wheel. I can keep the windows rolled down well into the 30s (F).
