I think it would be a lot more cost effective to order the leather seat covers in the color/stitching that you want..... but still expensive.
I'm finding with Jag OEM parts that the price varies wildly from dealership to online sources, from US and UK. I've wondered about changing seat covers myself, and found that they cost something like $1500/ea. You need 4 total (seat backs and bottoms) so $6k + installation for rough numbers?
There are many upholstery shops that "do seat covers" but there is one shop in the UK that did an amazing job re-trimming an F-Type. If I can find/remember who they are I'll post it.
Any competent upholsterer can re-upholster the seats in a leather of your choice for a much more reasonable price than buying new seats or even new seat covers. Several months ago, I purchased a beat up pair of C4 Corvette seats for my 1972 De Tomaso Pantera (virtually the only seats narrow enough to fit in it), had my personal upholsterer redo them in leather with diamond quilted stitching, redid the door panels and the rear firewall in the same style and everything included cost me less than $1000.00. The actual labor was $800.00 and I spent a couple of hundred on the leather.
