Is it possible to say what the manual take rate was on the models for which it was an available option? That is, for model years 2016-2019, and V6 only?

Only if you know the total V6 numbers which I don't have. A rough estimate assuming 60-70% of all F-Types made yearly are V6s then the take rate would be around 5% for 2016 and less than 1% for 2018 and 2019.

Correct but even breaking it down like that the difference in rate take would be minimal.

Hi
I may be reading my VIN wrong but it seems to be an earlier car by serial number than those listed as the first introduced into the US, specifically mine is
SAJWB6FC3G8K20688
Am I correct?

Correct. Yours is one of the pre-production F-Types that were build in the pre-prod runs Jaguar did before the 2016 model production officially started. This is typical when switching from one year to the next.

The satellite grey was a 1 year only color. In sunlight it is a beautiful blue. Mine gets lots of compliments. The paint chips just look grey, so you would not be able to tell what a gorgeous color this is. That probably led to its demise.
