Engine oil cap says Castrol 0W-20.
I've always used Mobil 1 5W-30 synthetic oil for my last 2 Vettes.
Wonder if there's much difference between the 2 brands & weights.
I'm driving around in 100 degrees in the Texas heat, should I go with heavier weights, or stick with Jag specs...?

Put simply you need 0W-20 or 5W-20 that meets the JLR spec, 5W-30 is not right, and for a hot climate like Texas 5W-20 would be better than 0W-20.
0W-20 is meant for cold climate and is arguably too runny (low viscosity) for a hot climate like Texas.
The basic oil specs are:
SAE 5W20 WSS-M2C925-A or SAE 0W20 STJLR.51.5122, where it changed from the former to the latter between 2015 and 2016.
And it doesn't need to be Castrol, any oil which meets either of the above two specs (including Mobil 1) will be perfectly OK, I have never used Castrol in either my 2010 XFR or 2014 F-Type and I haven't had a single problem.

NavyBlue - I live in Houston also. As OzXFR pointed out, there are two specs for the engine oil with the STJLR.51.5122 superseding the old Ford WSS specs. Mobil 1 does NOT meet the new Jag spec, but it might meet the old Ford spec. My car is a 2016 year model and the owners manual only allows the Jag spec oil. Note that the Jag oil has a fluorescent dye in it, so in the extremely rare circumstance that the engine oil is questioned it would be relatively easy to tell what's in the crankcase.
I haven't found a source for the Jag spec oil in Houston except for the dealerships. (I miss buying Mobil 1 at Costco)

I bought the Castrol Edge Pro from here this spring, and changed my oil for the first time myself.

In warmer climes, JLR will accept 5W-20, as well, if it meets the JLR spec.

This ...sort of....fits here.
Just had the 2 nd yr service on Monday. Bill shows 8 l of the fancy factory oil, for a modest $149 ( oil cost...$18+ per litre !! )
When I went in I told the service writer the tales from the internet about 6.5 l for the AWD not 7.5.... he put it on the w/o and nothwithstanding 8 shows on the bill.
It showed just under full when I picked the car up....drove home 400km and yest. it showed "overfilled" with a little warning sign. Emailed the dealer (400km away) and have just been informed Jag says 7.25 l . No reply yet to w/o/n safe to drive it.
To be slightly "on theme"...$18 a litre...scheesh ( even though it's in $Can )

This question has surfaced on every high performance car forum I have ever belonged to....Viper, GT-R, Z06, Hellcat and now, F type. I’ve seen every imaginable response and there’s probably more I haven’t seen. During the warranty period, most every authorized Jaguar ( or whatever car you own) dealer will very likely stay with the spec oil. I have heard stories of some dealers in very warm climates, like Phoenix, AZ, moving up to the next grade higher oil because of extreme ambient temperatures. But, your car is not a warm blooded animal, it’s a machine. The thermostat is to keep that car at a certain temperature at all times, with the possible exception of a racing environment. Running the factory fill while in warranty is the correct thing to do, in my experience. Those Jaguar engineers are really quite intelligent, don’t sell them short.

I use 10W-60 in my MV but that hardly means that it would be right for my F-Type.
Trust the people who designed the engine. They know the viscosity that is right for the clearances. With oil-coolant heat exchangers the oil gets to temperature more quickly now, and "hot" oil viscosity is more consistent.

If you are really insisting on second-guessing JLR recommendation, then you need to look at viscosity at operating temperature, and not SAE numbers.
