I'm 6'4", weigh 190 and have a 37" inseam. With the seat all the way back, I have adequate leg room and yes the 2018 MY onwards have thinner seats = more legroom. To get a couple more inches on long trips I often drive without shoes or in flat bottom driving shoes - it does make a difference! As for headroom, I like to sit high up, so with the seat all the way up I still have about an inch or so extra headroom without opening the pano roof.
So when you get a chance to test fit an F-Type try a few of these settings and see how it works...

My previous daily driver was a Lotus Elise which actually had more leg room (once you were in it), and my wife’s Mini is cavernous by comparison. Not a problem on my commutes but it gets old on cross country trips of more than 2 hours.

When looking i was particularly annoyed at the Porsche Boxster and Camen and the lack of legroom for me and I am only 5'9".
My 2018 F type is very comfy.
Funny, my 63 MG has room for folks up to near 7'. However you might have to duck to see out the windshield. .
With the seats all the way back I cannot get near touching the pedals.

Each person has their height in different ways.. i.e. some people have longer legs, some people have longer torsos. With that, it's best that you try to sit in one. There may be someone on this forum that is the exact same height has you; they fit and you don't just simply down to where their height has more focus compared to you.

6'5" and a good 250lbs and I fit, let's call it snug. I am about equal top to bottom, 32" leg.
Not saying I would like to drive across the States or all of Europe, but where I am here it is plenty comfy and as I spend most of my life with the top down, I only have to worry about headroom for the summer months with the top up, and even then I don't have a problem apart from the lack of visibility!!
Trick for me is to put the seat on the floor, as low as it will go, crank it forward a couple of notches and the lean it back, works a treat..

6'6, 235lbs, longer legs than torso, have driven for hours and hours... plenty of 5-8 hour days, a few 10-11 hours. 42000+ miles in 3 years and I've never had a back spasm, ache, etc and although I'm pretty active I do have some crazy dumb back problems. =( This car has been a dream. Now the new one is being delivered with heated *&* cooled seats. Fun for the nethers. lol
