Jaguar experienced a large number of cloudy wood finish problems for the 2000 and 2001 model years. I read one story about the long term finish specialist retiring and things were never the same. Don't know how true that is. They replaced them under warranty until the subject cars pasted their warranty period.
Jaguar uses, or at least did use, Madera Concepts as their US wood refinisher. The cost was about $1200 several years ago for the refinish only. See their web site at: http://www.maderaconcepts.com/
I am sure that there are other folks that do this. Try eBay as I know there are several folks that do shift knobs and other wood parts.

Yes, it is real wood. It always has been, and hopefully always will be. There is another place. I don't know of there quality, but I have heard good things. I have no idea of the price either. I haven't contacted them because I already know I don't have the money.

Tophat has suggested British Auto Wood. I've had them do work for me in the past. They did a great job! The cost was very reasonable as well. I found them on Ebay, while I was shopping for a custom wood shifter knob. The gentleman's name was Sol Chaplin, and they are in Florida. I sent the parts, a check, and a note specifying the work I needed done. Within 2 weeks, the parts were on my door step.
