Oh my goodness. First of all, I'm sorry for your loss, and I hope that you're doing okay. I lost my mom earlier this month, and regardless of the relationship, it's always hard to lose someone.
Regarding the car... The poor thing. That looks like a Mark VII, Mark VIII, or Mark IX. Mark VII was made from 1950-1956; Mark VIII from 1956-1958; Mark IX from about 1959 - 1951. The Mark VII has a split windshield; Mark IX has a single windshield (and I think the Mark VIII is single as well). The Mark IX has disc brakes and a 3.8 engine (vs. a 3.4 in the VII).
I'm not sure where you're located, but it looks like the poor thing has been abandoned for decades, and if there's no rear glass, I have to assume the entire interior is trashed. The body looks trashed. I think the best you can do is perhaps salvage some parts off of it. If the car had a $200K price tag restored, there's perhaps some work to be done, but since you can obtain good specimens for $20K-$40K, this looks like a money pit to me.

It appears to have already been a "Christmas tree" providing parts to other cars as the taillight housings and fuel filler flaps are missing.
As you are in Australia I suggest asking your local state Jaguar club to have a look and see if there are any parts worth salvaging.
eg motor, gearbox, differential etc.

I cannot tell if the rear window is intact, but if the originally gorgeous interior of this car has been exposed to the elements, it is cost prohibitive to attempt a restoration. Bill Mac is correct; in may well serve as an "organ donor" to other similar Jaguars of the era can continue to live on...
