It's a long time since I had a Mark 2, but as I recall, it put the most common multigrade of the time in it, 20W50. Later, when I had my XJ6, Jaguar changed recommendations for what was essentially the same engine made on the same machinery (since 1948 !!!), and I put in 15W40. I never had any problems with oil at all. Of course nowadays the stuff is much improved, but is used on modern engines with far closer running clearances than were ever achieved by Jaguar, so oil pressure can be maintained with stuff that look like paraffin when you pour it out ! I would always put in something like 15W40 as a minimum so the oil pressure is maintained.
When these were a common car on the road, I think most people would have used 20W50 multigrade. YOu can buy this at Halfords or you can look on the internet for Duckhams Q20W50. However, you could also use 15W40 from Castrol or Shell. I would not use anything with a lower W rating, the larger clearances of the XK engine compared to modern engines would lower the oil pressure too much.

See this thread & referenced threads if your engine is in good condition for long engine life in modern times. Jaguar engineers would love to have had modern lubricants available to them. All Aston Martin's known lubrication issues with WO Bentley & Tadek Marek engines have been solved with modern synthetic lubricants.
The thickest oil Jaguar ever recommended in tropical conditions was an SAE 40.
