I can see you've already found your way to the X300 forum with this issue so there's no need for a link to it from me. The 'HOW TO' thread at the top is a good place to start for information on regular issues.
Please remember to add vehicle details to your Signature to help others to give relevant advice. Go to the User CP button on the left of the top menu bar, then Settings & Options under Your Control Panel. Select Edit Signature and enter the details.

Hi Ed, and welcome.
One of my own cars is the same as yours and I've had a similar problem. It turned out that a bad earth/ground/chassis/frame connection where the wiring loom to the ECU is bolted to the floor next to the transmission tunnel was stopping 'disarm immobilizer' signal getting from the security module to the ECU, and so starting was inhibited. Maybe yours has the same problem ?
Bad connections are not exactly unknown in a 20-year+ vehicle, and a modern(ish) Jaguar has plenty of connections to potentially fail !
