i bought a rat rod project that has a Jag IRS. I’m trying to determine what year and model t of this unit so I can replace pads and rotors. The ID tag is missing, but I have the parts numbers from the calipers: 64321787 & 64321788. attached are some photos of this unit.

It sounds like a fun project.
As I understand it, that IRS was used virtually unchanged throughout production of Xj6, Xj12 and XJS over a period of nearly 30 years, beginning with the Series 1 Xj6 in 1968, until Ford bought the company in the late 90s. Only real difference being which differential center section was used, Salisbury or Dana.
Yours is one of the early units, still bearing inboard brakes and laminated brake discs. Other than that, most the parts will be unchanged out of the factory over that long course of production.
Of course, there's no telling what other users might have done during their ownership.
