We have a 2004 xj6 and the engine coolant light came on do I use distilled water and where do I put it

Distilled is fine as a top up.

Also, I dont know where the filler cap is on the X350 model.

The members in the XJ8 (X350) Tech Section will sort that quickly for you.

Good to have you with us.

You should use a 50:50 mixture of coolant:distilled water but for topping up, distilled water alone is better than running with low coolant. Only top up a COLD engine. You don't mention if it's a V6 or a V8 but the Coolant Reservoir is in the same location on both:
