The general purpose of the valet button is to lock the trunk so a valet can't get in there. The system works in conjunction with a special (restricted function) valet key. Let's say you're fleeing the country with guns, gold bullion, and jewels in the trunk. But first, you want to stop for one last meal at your favorite highbrow restaurant. Naturally you don't want the valet to have access to the trunk.
Open the glovebox and depress the valet button. Close and lock the glovebox using your regular (full function) key. When you drive up to the valet booth, take your regular key and give them the valet key. The valet button inhibits the trunk button on the dash, and also the exterior pushbutton on the trunk lid. The valet key doesn't open the trunk's exterior lock cylinder or the glovebox. The valet key only works the ignition and the four cabin doors. Your valuables are safe in the trunk. When you get the car back, use your regular key to unlock the glovebox and release the valet button, which returns the two trunk buttons to normal operation.
