I do remember when the S-Type was introduced we got one delivered to the dealer with VOICE ACTIVATION.
The lady that bought it never could get it to respond properly even after the 30 minute 'voice-adaptation/learning' session.
She had a soft 'squeaky' voice so it never worked for her. It was an expensive option that she paid for and couldn't use. (she was angry).
Blue-tooth was introduced much later in the S-Type production.

Probably the best way forward for you would be to use an FM modulator bluetooth unit.
Jaguar parts catalogue state the bluetooth phone module works from vin N41585. (06MY cars made in 2005)
However I think it will work in any facelift S-type with d2b.
However it may not be 'plug and play' in the pre-2004 cars.
The s-type system only works for phone calls, only one phone can be paired at atime and it will not work with all the latest phones.
The later x-type unit (based on the ford bluetooth unit) that was made from 2008 is a lot better, it should work in all X202 or newer cars, but you may need the later system update to the head unit.
This is still only a phone system (ie no music or texts) but more than one phone can be paired at a time and it will work with all the latest phones.
If you add your cars partial vin number to your group signature it will make it easier for us to tell you what will work and what will not.
See my one below fior an example.
