The 02-model year cars were all made in 2001.
It is unlikly that your car was built in 2001 but not sold/used until June 2002, but it is posiable.
My guess would be that you have an 03 model year car that was made in 2002.
If you look at your vin number the 10th prefix will give you your model year.
2 = 02 model year made in 2001.
3 = 03 model year made in 2002.
The change over vin number from 02 model year to 03 model year was M62936.
It is a good idea to add your partial vin number to your forum signature as it will make it a lot easier for others to help with any questions you have.
See my one below for an example.

Produced in 2001, taken out 2002
I checked the 10th digit and it is actually 2. My sequence number is M561xx.
Guess this is one of the 80 produced in 2001 but taken out in traffic quite late in 2002.

Which was all very confusing and Jaguar eventually did away with the terminology.
Quoting my VIN to a retailer for any part I want to buy is a waste of time as it comes up as an x200 car.
I therefore always quote the first of the 'official' x202 production numbers, 'M45255'.
Still all very confusing. If the official x202 began at M45255 my VIN is over 100 units/cars before that number..

What is your 10th prefix in the vin number? is it '2' or '1'?
It would also be interesting to see what date stamps are on your body components and if it is a V8 the engine number will give you the date the engine was made.
As far as I know the production line would have been changed over the 2001 christmas holiday to avoid any production delays, but your car's vin number would indicate a 2001 build date?Perhaps it was part of a test run done between Christmas and new year??? Or perhaps it was as you say a pre-production 'test' example that may not have been assembled on the main production line?
(I had thought that these 'test' built cars were made before the version became officially type approved for use on the road, but as they sold your one rather than destroying it I must be wrong?)

The body date stamp on my STR is on the RH inner wing, you would have to remove the plastic cover to see it.
Here is a photo of my one when i was replacing the wing:
