There is a lot of safety build in the stock tune (purposely or not). Once you make a lot of changes i.e. like spinning the Eaton faster you are flirting more with the boundaries of detonation. So if you want to do a tune right, you need to have a eddy current dyno (so you can hold a certain rpm), a very good fan to help cool everything and at least be able to measure if detonations have occurred (so you know when the ECU has reacted to an occurrence by pulling timing), so that you know where about the boundaries are with your specific car, and can ensure a safe distance to that.
A sharp tune for instance could work for street where you would only do very short bursts, but could risk your engine on the German autobahn. Needless to say that once something degrades in your car you might be getting quicker to a boundary…
A remote tune is very risky imho, not sure how many specialists would do something like this, maybe if they have done several cars themselves on a dyno with exactly the same mods, you maybe could do this with a mild change. A quick gain is the extra amount of fuel sprayed, but that could actually also be your insurance against detonations. Advancing the timing could be a gain, but once you start heating up the charge, you may even need to retard the ignition. So what works on a stock car doesn't necessarily work on a modified one.
What some tuners do as also change the throttle response, and this would be a nice feature on its own, but anything that you will sharpen is risky, but if you don’t mind than of course any hp you can gain is part of the fun.
The gains are usually not that much and what you get on a stock car (so the figures you see advertised), can’t be added upon other changes like pulleys, so you need to weigh all pro’s an con’s carefully I would guess.

If you want to go the remote tuning road you could try http://www.viezu.com in the UK, they start with 299 gbp (about $480), and they deliver too many tuners.
