My dash cracked with pic!!

That's not your dash. It's the demister panel. Many threads about this. I just replaced mine with a new one from Jaguar. Expensive like all Jaguar parts at $380.
Most likely the mounting tabs underneath are broken which will give you a rattle. Rattles drive me crazy so at first I took it off and added some foam weather stripping but with heat and time the plastic will fail. Once the mounting tabs break off underneath the entire panel vibrates like a drum on top of the dash.
Don't buy a used one as they will also be in the same shape. You can remove it and do a fiberglass repair but it won't look very good. Several people have done that. Pictures have been posted so searching should bring them up.
Most likely yes but to be fair the plastic does get delicate after all this time. You might complain to see if they will replace it. Check out how to remove it because that's where a lot of them get broken. You MUST remove both A-pillar covers first. A lot of people just try to pry it up and pull it out. This is a guaranteed way of breaking it!!

Ok it wasn't the glass shop then. I've been noticing a little rattle that seemed to be coming from that general area for some time before replacing the windshield.
