New rims, will they fit?
I recently bought new rims for my 2005 STR. They are staggered Caravela rims with tires measuring 245/40/ZR19 Fronts and 275/35/ZR19 for the back. Will I have any rubbing issues? I'm hoping I wont have to replace the rubber on these. Did some research on what will fit on a STR but I'm still not 100% sure. Any info is appreciated.

Maybe you should have asked the question before you bought them?
Staggered set in the sizes you've given are for an X150 XK.
OK standard size for 19" on an STR is 245/35R19 for front & 275/30R19 for the back.
So your new rubber is a bigger rolling circumference than the stock STR size.
This may not be much of a problem, just means your speedometer reads 3.7% faster than before, which means it would probably be accurate now instead of slow.
Other thing to consider is the offset of wheels. The S-Type has a different offset to the XK.
STR usually has ET60 both front & rear.
The Caravela's are 19x8.5 ET49 for the front, 19x9.5 ET51 for the rear.
Basically you are pushing the whole package 10mm further out from your suspension.
It might fit, it's not an exact match but close, there is a chance of rubbing on the inner edge of the wheel arch, which is also exacerbated by running a taller tyre than stock.
I know of an STR that ran 20x9 ET49's with 255's and it was rubbing a little, but that car had been lowered.

Thanks for the info. I'm pretty sure they will fit well, if anything I will put different rubber on them to compensate a bit for the any differences. I got an absolutely great deal on them which is why I jumped on the purchase. 2,000 for all 4 with Michelin super sports and tire pressure sensor. Off a 2012 xkr, so it's not brand new but there isn't one scratch on them. I guess that at the worst I will have to sell them, which probably means someone here will get a great deal as well. And what did it for me is that they have been powder coated satin black. In my opinion they look awesome. Will post pic once they arrive.

Not strong enough? really? hmmm, well these are OEM, im sure they will hold up fine. STR is definitely heavier then a 2012 XKR but i doubt its a difference that would surpass the max load the wheels can take.

Tire sizes/widths should clear fine, depending on offsets of course.

Only other thing you will need to look out for is brake caliper clearance,
Once they're bolt up, spin the wheel and make sure there is no rub with the caliper, if anything, you want a bit of an air gap, those wheels might come close.
If so, you will need a spacer, further pushing the wheels outboard, at which point it might start rubbing the inner fender lip,
