Yes that was the one thing Jaguar left out. It's a shame as it really limited the car from a driving point of view.
Rumor has it that at the time Ford owned Aston Martin and Jaguar and they wanted AM to be above Jaguar so they de-contented Jaguar. Note that it took until Jaguar was sold to Tata and split off from AM that we finally got the E-diff across the entire Jaguar line up.

NEVER saw a V8 with a manual gearbox!!! (not North America but maybe ROW?)
NEVER saw a Limited Slip Differential.
I did work on several V6 with the manual gearbox.
I did enjoy the 2001 4.0 X200 I had in the early 2000s.
It was the wife's daily driver. She drove 140 miles a day to work and back.
Fuel went to $3.50 a gallon so it had to go.
(sold it to get a brand new VW TDI New Beetle for 40+ MPG)
