Default the One thing i would do is...

My 2002 s-type is as stock as a car gets. I'm looking for ideas to improve the car. Other than standard maintenance items, how would you answer the question;

The one thing i would do to my S-type is?...

Well, there are lots of little "improvements" I have lined up. My next project is to install extra accent lighting as in the new XJ. I have just ordered four 300mm 15 LED SMD strips in Amber (to match centre console down lighter) which I am going to mount Under the footwell kick plates, front and rear (with LEDs poking through tiny holes). These will come on with instrument lights and give a low Amber glow up the door cards and side of the seats.
I've already experimented with LEDs, tape and a battery, and the effect is subtle and low key.
Then there are extra LED boot (trunk) lights, LED puddle lights in the base of the door mirrors.
I know, I know, this sounds a bit "chavish" but it will be very subtle, promise.

Make it run on 87 octane and get 40mpg.

Upgrade the exhaust system. I did this to mine and it changed my Jag from a purr into a GROWL!
