I think it's happened before to members, but when using Search take less note of 2003+ cars as they have a lot of different electrics. You might try reading temperature-related engine sensors using OBD. ECT especially. But first check out relays - swap for known good one(s). See your handbook / the Electrical Guide in JTIS (free on here).

When installing the new thermostat - is the check ball at the 12 o'clock position?
Did you purge air from the cooling system?
Typically, when the fan runs after the engine is turned off - that is an indicator the coolant temp is too hot.
Additionally, check power to the aux coolant pump. (I have the 4.0 V8) not sure if you have one with the 3.0 V6 but check anyway...
Odds could be you need a new DCCV or you have a blockage somewhere in the cooling system if the above checks out good.
