My 03 S-type had the jumping RPM problem a few years ago around 2000 RPM. After a lot of searching, it turned out to require replacement of the torque converter. Ever since, it's been perfect. Don't know if your issue is the same problem or not, but it sounds like what I had. There was no codes at all. I think there is a TSB on it.
