Good news and thanks for the update.
Now the panic is over maybe it's a good time to take a look around for a dealer alternative.

Here is copy of bill. I had 15 Year service done at same time.

Thee overheating part at the bottom was 2000 Euros approx.

The parts cost shown do not include VAT/Sales Tax which is 20%, added at the bottom

The Water Pipe replaced (Tuyeau de Sortie) has part number JLM21896

They replaced the "Couvercle de Thermostat" - Thermostat Cover - part AJ84255 - is this the Thermostat Tower you mentioned Steve?

Your advice steered me in the right directions, particularly making me aware of the damage to the alu Jag STR engine causable by overheat!

I don't know much about JLM21896 though it's very expensive

Hellish expensive price though, I've found them over here at £667.00.

Was that online, and with or without VAT?

Of course Jag parts fitted down here in France by Jag dealer are almost certainly at a hefty premium over UK prices.

I'm sure that an independent garage would not have replaced that pipe, and the overall repair would have been less than a third of the Jag dealer price.

But I had no choice since I did not feel able to do the repair myself, and there was no viable independent nearby

Online. Price ex vat I think.
Personally, I wouldn't have replaced that part unless it needed it, cracks or known failures, but as you've already said, you were between a rock and a hard place and had no other choice.
But the main thing is, it's fixed now and that's what counts.

I've searched everywhere and can find no reference to part no. JLM21896 being replaced as a routine part of thermostat change. It does not seem to have a remarkable failure rate either so it's a bit of a mystery as to why the dealer chose to replace it.

In any case the car is up and running now so it's all water over the thermostat I guess.

From the pic in the link, it doesn't seem like a similar circumstance, but who knows? There is an aluminum fitting in the 3.0L cooling system that attaches to the intake manifold, and has a short hose that connects to the upper rad hose assy, just behind the infamous "tank turret." Per Jaguar, the service part for the HOSE is the entire assy, including the aluminum horn/fitting for $123 or some such. The hose itself can be made from cutting what you need from a nominally $8 radiator hose. As I said, I don't see a hose attached to the part in the link, but perhaps they've employed some similar trick?
