Wife hit a deer

From looking at JTIS is seems quite straightforward.
1. Remove the door card
2. Disconnect the mirror's electrical connector
3. Remove the trim panel on the door that covers the back of the mirror
4. Remove the nut covers
5. Remove the wiring harness grommet
6. Support the mirror from outside (have the wife hold it)
7. Unscrew the nuts and remove the mirror.

What you will probably find is that the mirror assembly is broken and part of it is still attached to the car as it is held on by 3 bolts which will have held up a lot longer than the plastic mirror enclosure. So you're still going to want to remove what's left of the mirror from the side of the car.

As to a source for parts, not a clue in the US I'm afraid.

Got off lightly there. The last deer hit report I saw on the forum took out the entire LH front quarter of an XK8!
As Vehlin has posted, door mirror removal is straightforward. However, there's several options of mirror which complicates sourcing a replacement:
1. Memory / non memory
2. Powerfold
3. Flat / convex mirror glass
4. Electrochromatic
Colour is the least of the problems - the plastic back cover pops off and is easily refinished in the required colour.

Thanks Vehlin that link helps that door panel looked impossible. I have yet to find parts but I can find the hole mirror and like GGG said the back part that is the colour can come off and be painted.
Thanks GGG
There is a dent in the door but yeah I was surprised there was more damage. The next day we had to travel the same road and there wasn't a deer there. He must have lived and ran off.

I have yet to find parts...
The diagrams in the Electronic Parts Catalog (EPC), which you can find in the X308 'HOW TO' quick links on the main page of the X308 forum, may be helpful in figuring out exactly what parts you need, and whether they are available separately from Jaguar. If you discover they aren't, it may be more economical to purchase a salvaged mirror off of eBay or from a local salvage yard.
Cheers,
Don
