I have recently acquired a MK2 340 which I have started restoring, I haven't decided if I how much mods to do yet and I am still fighting the rust bugs.
I have found some great info on this forum, and some guys having carried out similar restorations have posted lots of information.
I can see you've already found your way to the MKI / MKII S type 240 340 & Daimler forum so there's no need for a link to it from me. The 'HOW TO' thread at the top is a good place to start for information on regular issues.
Please remember to add vehicle details to your Signature to help others to give relevant advice. Go to the User CP button on the left of the top menu bar, then Settings & Options under Your Control Panel. Select Edit Signature and enter the details.

Well after a bit of work, the engine is nearly back together
Rebored
New Pistons
Regrind Crank and balanced
Oil seal conversion
New valve guides
New valves and springs

Flywheel lightened and balanced
Camshaft polished

very detailed! looks cool. doesn't need Mike's headers.
The existing headers are in a sad state, new headers will cost the best part of what stainless headers will cost me.
I am not sure what else to do with the existing ones to make them look good enough to use. They still have bits of the existing porcelain on which will spoil the look if I repaint them.

If so, this is the lowest cost I can find quoted anywhere for refinishing the OE ceramic:
That is the cheapest I've seen so far, but still with the dollar rate that will be nearly £500 shipped both ways and a new set from SNG are £550 inc VAT, I looked at the sprayed heat saving coating, but that's even more money.
I can get a set of manifolds(headers) and downpipes in stainless made up for £1000 which would look great, so I have that dilemma. Do I stay completely original and follow your suggestion, new from SNG or go for the more power efficient (Less exhaust friction) and probably IMO better looking stainless.

A local powder coater here in Ohio also does ceramic coating for headers. Coatings are dull to start. If you want polished, they are tumbled. Similar process to "Jet Hot". Perhaps a local powder coater in your area does the same. I've used the local guy with great results on four sets of exhaust.
Also, and i'm sure you have checked, I use to see ads in Hemmings for porcelain.
Strictly stock or modified will look great on your detailed engine.
