Help with 20 Inch Custom Wheels and Tires for 97 XK8?

I'm planning on getting new wheels and tires for my 1997 XK8.
Twenty inch aftermarket wheels seem to be pretty common and inexpensive but it's not clear what will fit on my XK8. From a style perspective I like the "Y" spoke or mesh look, such as on the ADR M-Classic, the MRR GT1, and the Stern ST-8. I'm considering either all chrome or black with a silver rim.
Anyone have anything similar (pics)?
I like the look of a deep lip on the rear wheel so staggered is an option if it works.
I've visited several tire and wheel shops and looked around online and it is not clear what really works on an XK8 without getting in the way of brake, suspension and steering components or rubbing the wheel well or fenders. I do not want anything to stick out.
The stock offset was 30mm, but the custom wheels start from 13mm and go on up. So for instance, on an 8.5 inch front wheel, what is the lowest offset I can use? A wheel shop told me his 13mm 8.5's would work but I'm skeptical.
On the rear, can I go to a 9 or 9.5 wheel and still not stick out? What is the best offset in the rear to enable the deepest lip? I've used an offset calculator on another forum, but the results aren't as meaningful across makes and models.
Anyone have real experience with this?
Another wheel question in regards to the lug nut bolt pattern - will 5x120 and 5x120.7 wheels both fit the XK8 or will there be a problem.
Of course, once the wheel issue is sorted out I need input on appropriate tire sizes.
