Bill, I never trust the "sealed for life" statements the dealerships make, regardless of the manufacturer.
As for the price of the service, to me that seems a bit high. You could do most of that in your driveway in probably 4-5 hours easily. The cost of the fluids isn't that much. Sure the full synthetic 75W-140 gear lube for the differentials is a bit pricy at about $12 a quart, but the rear diff uses 1.2 quarts and the transfer case uses like 0.5 quarts. If I remember right, the tranny doesn't use that much fluid either. The big thing with that is that you require a special fluid. I haven't tried finding it out in town, but hearing other members talk, you can only get the fluid from Jaguar itself. Even still, 4-5 hours with your car, the ability to see the car up close and know the exact status of everything while saving $500 sounds good in my book. I'm about ready to do this very service to my Jag as I just bought it and want to know the status of all the fluids.
The only pain that I can figure out so far is that the rear differential requires a vacuum pump to get the fluid out. But, these pumps are pretty cheap ($15). The other option is to get some 3/8" rubber hose, feed it into the fill hole and then vacuum drag the fluid out that way. May not get 100% of the fluid, but you will get a majority of it.
I know not everyone is mechanically inclinded. But, the fluid changes are pretty easy.
