guyster, I guess I will ask the silly question, are you engaging the defrost system? There are two buttons (one for front, one for rear) that you can push to engage the system. The rear one looks very similiar to the front one except the rear one has a small R on it. When depressed, they will light up red. if this is all good, then I would be ensuring that you are keeping the A/C system engaged (the red light needs to be on). I know this goes counter intuitive to what you would think, but all the red light is telling you is that the A/C system is available for use. With the new cars being as sealed as they are, use of the A/C system is needed to remove the moisture from the air to aid in clearing the windows.
Is the air coming from the window vents warm? If yes, then that is confirmation that you are either not keeping the A/C system engaged or the A/C system is low on refrigerant and is unable to remove the moisture from the air. If no, then odds are you have a blend door issue and it is not allowing the heater core to warm up the air to remove the current condensation.
Keep in mind that if you have the automatic temperature controller, when going into the defrost mode, it automatically takes you into manual mode and you need to adjust the fan and stuff like that. So, keep that in mind too. You don't state if you have the automatic heater-A/C or if you have the standard 3 dial setup.

One more vote for the pollen / cabin filter. It is possible the previous owner never changed it. Mine will act up when this is restricted. You will be amazed at how quickly it gets dirty.

Here is the procedure for the wiper arm removal which is needed before getting to the pollen/cabin filter. I do not use the "special" tool but I do have a battery post terminal removal tool from Sears which works perfect. I think it was about $5.

I never run my A/C in the winter and don't have problems with fogging..and rarely use straight defrost ..then the compessor will run.
It's either the recirculate door is stuck closed (keeping it in recirculate) or the Pollen filter is clogged like Keith said..either condition will cause excessive fogging.
