Mark, open up the driver's door of your car. Look down in the bottom right corner of the door jam (next to the hinge for the rear door). You should see a white sticker there. If you look in the bottom right corner of that, you will see a note saying "TRIM" with a 2 or 3 character code after it (on my car, it is ADX which stands for the light cream interior with the darker brown dash and accessories). If you get this code, you can take it to any automotive paint store and they will have the exact colors there for you to match things too. Keep in mind that this code will bring up about 5 different colors, but they will be significantly different due to the various colors on the inside of your car (ie, the color of the seats, the color on the center of the steering wheel, color for the top of the dash, color for the wood trim, etc).
On a side note, if you ever need to touch up the paint on the exterior of the vehicle, you will see in the bottom left of that sticker "Paint" with a code after that. That code is specific to your year car and as long as it has not been repainted to a different color, you should be able to get an exact match from a local paint store.
