Question How to Dyno Newer Jaguars

I would like to know how you put these new Jaguars into Dyno Mode to run them on the Dyno?
I have tried 2 different Dyno shops wit hmy XFR and have had some issues dyno this car properly. I uncliped and removed the coolant bottle to get access to the coil pack/inj wires for a tach signal/reading. I turned DSC all the way off and put gear in S mode and attempted to use 4th gear as my pull. But soon as I floor it the car will kick down to 3rd gear. I think if I do not floor the gas all the way but rather hit it down to the micro switch for the kick down gear button it would hold 4th gear but I am not sure. What rpm/speed should I start with in 4th gear for dyno runs?

And I know there must be some Hidden Menu, Dyno Mode, Secret Menu, Engineering Menu somewhere in these cars as Dyno Mode is needed all around the globe. So how can I keep the cluster from giving tons of faults when dyno , get a good tach signal, and hold 4th gear please?

With My 95 xjr we had to keep it in 3rd gear and gently build the throttle up

You can only floor it if you have past the shift down rpm, there is no way to keep the box into a gear below that with full throttle. Not sure where the point is for your car, but on mine I usually go close to 4000 rpm and then floor it (in 4th).
