Can you change the LEDs, sure. Granted, you have to keep 2 things in mind: 1) you will need a series of 10mm 3.3 V LEDs of the color you want and will need to desolder and then resolder all the LEDs in place, and 2) you have to figure out how to separate the headlight assemblies to gain access to the PCB boards (this will be the most difficult part as the headlights do not separate like older style headlights by simply applying some heat). Some members have cut their headlights open to allow for modification and then ended up having to glue the two halves back together. This I would think would lead to a likelihood of having a leak somewhere and/or a weakening of the headlight housing leading to major failure later.
I do a lot with LEDs and there are tons of projects you can do. I currently have a series of LEDs that I am using for a back porch light. I have managed to squeeze out about 3,500 lumen of light from a 9 watt source. Most bulbs only give you about 700-800 lumen for a 9 watt source. I am now starting to get into using the SMDs to get LEDs into the smallest of places. The 0402 LEDs are tons of fun to play with (NOT!!!!). I have looked into doing an LED upgrade to my headlights where I would mount some RGB LEDs in the headlights to then be controlled with a special controller to let the "eyes" of the kitty be whatever color I want as the car is parked. There is a company that is doing a kit for XFs that will do a red version of what I am thinking. But, I always have to take it one step higher.
