The screen will display the same selection as you had when the ignition was turned off
The main main modes are
Nav
Climate
Audio
So if you are on the nav screen and you cycle the ignition you will get the nav screen on boot
So if you are on the audio screen and you cycle the ignition you will get the audio screen on boot
And so on
If you are asking how to default it regardless you need to add some electronics to the head unit.
What you need is a pair of the 528T Pulse timers from directed electronics
These are a relay that has a delay timer built in
One is triggered from the ign II signal going off.
This is used to keep acc power to the head unit, set this for approx 1-5 seconds
The second 528T is also triggered from acc II but you use the output to press the head unit button
You can also do this with a micro controller like an pic chip or at-mega but the above is all off the shelf gear.
What you are doing with the above is delaying the acc going off to the head unit then pressing the switch before the power is lost
This is exactly the same as you pressing the button before turning off the ignition, just an automated way of doing the same thing

In my 2004 XJR, the answer is no. The only screen you can return to is Audio, Climate, or Phone. Both the "Off" setting and the "Logo" setting will be lost when you turn off the key. If I have the screen on Audio, then go into menu and select the logo screen, the Audio will appear the next time I start the car. If I select Climate, then the logo screen, Climate will come back when I start the car.
