Now I have to ask why they would target a 20 year old used Jaguar instead of a car worth more?
Seems like a lot of work and danger for not much reward?
How did you determine this was how the car was stolen?
This guy has used that on a Honda and it did work but again a 2021 Honda would be worth stealing and a 2004 Jaguar not so much?

Perhaps your Jaguar was a ringer or double for his.
With a secure place to store & work, away from curious eyes.
An entire parts car, matching in color, could be very handy.
Used to work with with such an individual many years ago.
Pretty good mechanic, always had nice vehicles.
Moved around a lot back then, lost track of a lot of people.

It had to be a nearly impossible feat for them to swipe that Jag. How on earth did they manage to defeat the security system, and not to mention start the car? Aren't the Jaguar XJ8s equipped with GPS so that the authorities could locate them? Actually, the Kias and Hyundais are the top picks with the car thieves nowadays as they can be easily stolen. Why would they even bother with a used car of such low resale value? With a car like that, the thieves are certainly not going to be driving it around in broad daylight. Actually, my guess is that they probably have it stored in some chop shop.

The police found it!
OF course they found it 2 days after it was stolen and never notified me. I didn't find out until they finally supplied me with a full police report and I read the note. By that time it had stacked up $447 in towing and storage fees that, of course, I had to pay.
No idea how they gat it started, but I have security camera footage of them bypassing the doors, starting it, and driving it away obviously in limp mode. The mirrors were still folded in the locked position. The ignition was not damaged.
They tried, and failed, to get into my trunk. In the process they damaged the trunk panel where the plate mounts and pulled my back seat forward. My sun shade no longer works, the car thinks the coolant is low even though it's not, and it appears the right rear parking brake may not have released completely. That wheel is black with dust.
It's dumping the rain today in Ohio, but I'll post some pics and see if I can post the theft video.
The ignition cylinder doesn't appear damaged and works fine.

If they had a key, the car wouldn't have been in limp mode.
The police say the flashing light in the hand of the guy on the passenger side was the IR flashing on a device like a hacked Flipper Zero. Each flash, they say, is a different RF code the device tried before the doors opened. The thing none of us can figure out is how they started it. I'm guessing the same device could bypass the PATS, but what did they use to turn the ignition?
All I know is that the car wasn't happy when it drove away and that she now has some electrical... quirks.

I very much doubt the situation is better in the realm of electronic anti-theft devices.
