Arnott suggests replacing both fronts simultaneously, not one at a time. If they replaced just one, it should be very easy to tell since the old one is going to have a lot of road grime on it. Be sure to look at both of them and see if just one was replaced.
I put two new Arnott's on my 2005 last week and it made a big difference in the ride for the better.

Just to confirm before I call the dealer.
1. They have to replace a single unit with a jaguar oem unit to retain the CATS system?
2. If they fit Arnott units I Loose the Jaguar CATS system and they need to fit 2 Arnotts at the front not one? I think it more likely that the dealer will only replace one front unit due to the cost?

Arnott does not employ CATS in their replacements so replace one or all with Arnott, you will lose CATS.
The dealer will replace whatever you tell them to. It's your money and you're the boss. If you stay with OEM, you can direct the dealer to only change one.

Air suspension
I went to coil springs. The air suspension is most likely to show any faults in very cool weather. Personally after being stranded far from home heading north was all I needed to do away with the possibility of air not being to hold the car up if a component failed. Yes, in most cases the air suspension rode nicer, but with coils, the car handles better and I no longer worry about the air suspension driving out of town.

I went with Strutmasters kit. I did go for the XJR kit so it is a bit stiffer but the ride only seems noticeably stiffer at low speeds where the air suspension felt the softest. The air suspension might have had CATS issues in my car, but the car rode harder than it does now at highway speeds.

Yes. There's a procedure to follow of disconnecting the air suspension module behind the rear seats and then disconnecting the battery for the reset. I went as far as completely removing everything air suspension related except for the air lines including the pump and reservoir tank.

I replaced my front shocks a month ago at 145k miles, because one of them would leak when it got below freezing. I regarded it as a maintenance item--whose shocks last over 145k?
I bought new Arnotts for $850 and so far I am happy with them.
