I think you need to define bolt on? It won't be a simple 2 or 3 part operation.
Since Jaguar offered the upgrade you can bolt it on but how many parts will it take? I don't know?
But if I had a wrecked XJR with all the brake parts I bet you could swap it over.
My old 2005 STR with the same Brembo brakes required 18" wheels. So I think your 19's would work OK.
One other complication is the XJR came with staggered rims so different width front and rear. Not sure if non-staggered rims will work with the big brakes?

My 2004 Super V8 normally runs on 20" Sepangs, they are not staggered though, all the same width. I thought it was just the XKR that had staggered wheels along with the newer x351.
I have the Brembo set up as well.
In the winter months normal Jaguar "Luxury " 18" wheels go on the car with winter tyres and no problem clearing the callipers.
You may want to consider why Jaguar decided against using the Brembos after a very short while when they updated the brakes on the newer cars. From experience you have to be careful about seized bleed nipples, I had to get replacement rear callipers a few years ago as the were really seized up, the new price for a pair of rear callipers is about £1000, luckily I found some used ones that were in VGC.

You will need the XJR Brembo front spindles/uprights as the bolt locations are different and brake rotor shield. They are no longer in production so you will have to locate used ones. Not too difficult to find. www.car-part.com
I THINK the Brembo S-Type R used the same front spindles.
I'm not sure of the differences in the rear, but the parking brake setup is different.

The front knuckles/vertical links are different where the caliper bolts on.
The rear hub carrier is different with the additional mounting lugs for the park brake caliper.
