The procedure for changing the fluid/filter and checking the level has been covered numerous times, and is probably in the DIY sticky here or on the XK8 forum. Certainly you can find it using the Search.
The car has to be level, either on jackstands or a lift and the engine running. When the level is correct fluid will just dribble out of the fill port at the back right side when the fluid temp. is 30-50 deg. C

That buzzing is your conscience telling you not to accelerate "hard" until your engine is warmed up. :-)
Most of us don't believe the "sealed for life" claim by Jag on the tranny. Remember "life" to them is until the original warranty runs out.
Service it every 60K or so.

Since you're in NYC, I would bet your mufflers are in pretty bad shape due to rust. Throughout the years being an auto technician, I've come across this before. The metal tubes where they are welded to the mufflers are most likely cracked or the metal baffles in the muffler are cracked. Both of those when cold can flutter, causing the buzzing noise until hot due to heat expansion. When this noise first started, had any work been done recently??

Lol, that was the first thing I was thinking, read through the thread, nope no one mentions it, then bam....Vector...lol
My XJ likes to take things niiiice n easy until she's well warmed up, then she goes!
Try any of that before she's ready and she's just sluggish and uncooperative.
I guess it'd be like coming over to your house and waking you up outta bed, then shouting and screaming at you and asking you to do a 400M sprint or a marathon
So a plus 1 from on "your conscience"
The real noise? Sorry I have no clue
