Cooling fans not turning on

Drove the Vette today so I didn't risk over heating the Jag. Picked up the replacement fan.
Installed it. Let car warm up, hooked my obd2 app. Let it get to 205 degrees Fahrenheit. BOTH fans came on at that temp! And they turned off at 195 fahrenheit. AC on, both fans spinning.
Test drove it. Today, it's about 75 Fahrenheit outside. Highest the car got up to in stop light to stop light, stop and go traffic was 208 Fahrenheit, AC off. AC on in the same conditions, 203 was the highest I believe.

EDIT: And I drove it easy for 30 minutes in that stop and go. When I got home and shut the car off, the fans would not kick on like they have in the past
