Default Engine Coolant Temperature Sensor

My 2000 x308 has developed a cold start issue, drives fine.

After a few min drive it will start normal.
Is this the most likely culprit?

Is the MIL on?

What DTCs are stored in the system?

What is the fuel pressure with the ignition in the ON position without engaging the starter? It should be around 3 bar.

Fuel pressure can be checked via the schrader valve on the engine fuel rail, or through the PCM with a smart phone and the Torque app connected by the OBD port.

Dreamjags: where are you located? If you are already into cold morning starts, it is most likely the temperature sensor (your photo). Frequently the issue once the cold weather arrives in North America. Most folks buy a new crossover pipe which usually includes a new sensor. But if your OBD reader can read codes, you might also be able to read the actual temperature change in real time: if so, not likely the sensor.

But put your location in the box in the upper right corner.

I'm in Virginia, mornings in the 40s when this occurred. Is replacing the whole crossover pipe easier seem like the sensor is easily accessible. Still raining but fuel pressure reading coming once it's dry.

It is possible that the problem is the fuel pressure regulator. Give this a try and see how it starts. Turn the key to position 2 and let the dash sequence process and then turn key off. Do this 2 more times. Then start as normal. Is the cold start improved? If so the pressure regulator is allowing overnight or sitting to allow the rack pressure to drain off and when you try to start the 3 to 5 second fuel pump initial run on switch position 2 isn't sufficient to recharge the rack.

Hood latch broke. Added an unexpected project to the weekend. Got that taken care of. Question on the temp sensor. I'm seeing 2 parts listed. AJ810031E & LNA1600AA

Got this shot with my endoscope camera for future people dealing.

AJ810031 is for later AJ27 and LNA1600AA is for earlier AJ26 engines. From your first picture, it looks like you need AJ810031. Anyhow, compare your old sensor with the pictures:
