Default Engine revving but acceleration is delayed

Where should I start to look at?

Was driving at 35mph... Hit the gas to pass someone.. Revved up but didn't accelerate until nearlyn3-5 secs later

Maf sensor or pedal control sensor in the throttle body.

If the rpms increase but no response, it sounds like a transmission problem. Have you checked the fluid level?

I'm going to take it in for an oil change and sway bar bushings... so I'll have him check the fluid level also.

I know the MAF sensor was giving weird fault codes to the dealer a while back. I want to replace that whole thing with a 3.5in tube and MAF, so maybe its time to do that if that is the problem.
