Default False Engine Temp Reading on 1999 XJR

Hi everyone, my engine temp gauge only seems to read correct up to half way then stops. The engine overheated recently, the electric fans were not activated and the gauge was still reading 'normal'.
I've changed the engine temperature sender switch, to no avail.
As some of you are aware this malfunction has probably cost me a head gasket job recently...I don't want to do it again and I hope that if someone can tell me what to do here it'll save someone else a head gasket job!!!!
Cheers All.
