I broke the plastic line off the round disk thing on the drivers side of the gas tank while changing fuel pumps, it appears to be a evap line of some sort. Is this a part that can be replaced? I was thinking maybe screw a barb fitting into the hole. Any input will be appreciated.

That part is called the Running Loss Valve, and it is an important part of the EVAP system that controls the release of fuel vapors from the tank. The Jaguar part number is NNA6126AD.
Your repair looks good, and if it is air-tight you should be all right. But leaks in the EVAP system larger than 40 thousandths of an inch (20 thousandths in 2004 and later cars) can trigger diagnostic trouble codes, so if you have any issues you might try sealing your repair with a good sealant that is fuel-resistant and oxygen sensor-safe.
BTW, you can use your User Control Panel to add your car year, model and engine details to your signature line so others won't have to ask for this info in order to provide accurate replies.
