They are offering you what they believe is average value for that make, model and year with that mileage. When you buy plain auto coverage, that is what you get on a total.
I'm sure there is a range of values for every car, and they are likely at the low end. You want to present the specific facts about your car to show you deserve the high end.
If you have an agent, you probably want to seek his/her help. They work for you, if they are a true agent. If you are with a direct write like Allstate or State Farm they are not really your agent. They may help anyway to retain your business.

If it were me, I would pull the engine and trans and sell them. Maybe some other things too. That would help you get some extra cash out of it.
Of course, that depends on your insurance company. When I totaled my car, they said I could take whatever I wanted out of it, just as long as it still had 4 wheels and could roll. I should point out that I drove it home after the accident, which happened 2 miles from my house. Unfortunately, at the time I didn't have the tools to pull an engine (or money to pay a shop to do it.) So all I did was take out the interior, factory stereo, and some other minor stuff.
I'll never forget when the tow truck came.. Flat bed with a winch. Despite it being a running, driving car (I even gave him the key,) he just hooked up the winch and yanked it out of the garage. Didn't even put it in neutral. Car left skid marks on the concrete. So yeah, later on I was kicking myself for not having pulled the engine.

To be honest, I am entertaining the thought of getting the same car... but as 'inexpensive' we think they are I do not see too many affordable(well, within insurance check) choices.
My second thought is to fix XJS to the 'daily driver' level. I am driving it around as is right now, and it's a joy!
So , the answer is - I don't know yet...
On thing is clear - the 2003 XJ8 is full of character, I really miss the feel of it....
